Ghee and butter in recipes
Ghee and butter are different cooking ingredients. Choose according to the recipe, the flavour you want and the information on the current product label.
A closer look.
Understand the general difference
The Codex food-category description defines ghee through the removal of almost all water and non-fat solids from milk, cream or butter. Ordinary butter retains water and milk solids. This general distinction explains why the ingredients can behave differently in recipes; it is not a verified specification for a HAMALIZ® batch.
A product name does not provide every detail you need. Check the ingredient declaration and, for butter, whether salt is added. Ask for the current label when that information is missing from the listing.
Use the ingredient named in a baking recipe
Butter contributes more than fat to a bake. Water content and the way butter is incorporated can affect the result. King Arthur Baking's test kitchen explains why the type and amount of butter matter. Start with the ingredient the recipe specifies, particularly when making a cake or pastry for the first time.
There is no single replacement ratio that this guide can promise for every cake, biscuit or bread. Use a tested recipe that includes ghee, or follow substitution directions supplied by the recipe author. If you experiment, make a small batch and record the quantity you changed.
Choose by the role in a cooked dish
For spreading or finishing a dish, consider the flavour and texture you want at the point of serving. For a cooked recipe, follow its order of ingredients and heating directions. A recipe that calls for butter may also account for its salt content.
When planning a menu, list ghee and butter separately so the quantities are clear. This is particularly useful for a restaurant or bakery quotation, where changing an ingredient can affect several recipes and the size of the order.
Confirm the product before ordering
Ask HAMALIZ® for the available pack, net weight, ingredient declaration, price and stock status. Butter enquiries also need a check of handling conditions and destination suitability. Do not assume a delivery arrangement for ghee applies to butter.
If you are comparing costs for a recipe, calculate them from the exact quantity required and the full delivered quotation. For regular commercial use, discuss product information and delivery arrangements before agreeing a recurring order.
